Banana & Beetroot Bread

A naturally sweet, earthy loaf that blends ripe bananas with cooked beetroot for a moist, flavourful bake. A wholesome option for a mid-morning snack or a colourful treat little ones will love.

Ingredients
  • 125g Ripe Bananas, Mashed
  • 125g Cooked Beetroot, Grated
  • 250g Self-Raising Flour
  • 5g Gluten-Free Baking Powder
  • 5ml Vanilla Extract
  • 50g Cocoa Powder
  • 125g Free-Range Eggs

What you need:
  1. Preheat the oven to 175°C and line a loaf tin with parchment paper.
  2. In a large bowl, mash the bananas until smooth.
  3. Add the eggs and vanilla extract, then whisk until combined.
  4. Grate the cooked beetroot and stir into the wet mixture.
  5. In a separate bowl, combine the flour, baking powder and cocoa powder.
  6. Gently fold the dry ingredients into the wet mixture until combined.
  7. Pour the mixture into the prepared tin and smooth the top.
  8. Bake for around 35 minutes, or until a skewer inserted into the centre comes out clean.
  9. Allow to cool before slicing and tucking in!
