Ingredients
- 5 Tortilla Wraps (10 inch)
- 200g Matured White Cheddar, Grated
- 100g Carrots, Grated
- 100g Courgettes, Grated
- 100g Red Pepper, Finely Chopped
- 600g Mixed Beans (Drained And Lightly Mashed)

What you need:
- Firstly, prepare your vegetables by grating the carrot and courgette, and finely chopping the red pepper.
- Drain and lightly mash the mixed beans, leaving some texture to them.
- Lay out the tortillas on a clean surface and sprinkle a thin layer of cheese on half of each wrap.
- Top the cheese with a spoonful of carrot, courgette, pepper and mashed beans.
- Fold each tortilla in half to create a half-moon shape.
- Place the folded quesadillas in the oven and cook for 4–5 minutes, until golden brown and the cheese has melted
