
Hidden Vegetable Pasta Sauce That Works Every Time
A simple, foolproof pasta dish packed with hidden vegetables for extra goodness. This smooth and flavourful sauce is a great way to encourage children to enjoy their vegetables and perfect for batch cooking or freezing.

Ingredients
- 300g Onion, Roughly Chopped
- 100g Garlic, Peeled
- 600g Carrots, Diced
- 300g Courgettes, Chopped
- 800g Chopped Tomatoes
- 200g Fresh Flat Parsley, Finely Chopped
- 400g Wholemeal Penne Pasta
- Splash Of Olive Oil
- Splash Of Water

What you need:
- Firstly, roughly chop the onion and garlic, then place them in a medium-sized saucepan with a splash of oil.
- Cook the onion and garlic over a medium heat until softened and golden.
- Meanwhile, start to peel and chop the carrots and courgettes into small chunks.
- Add the carrots and courgettes to the pan, then pour in the chopped tomatoes and a splash of water.
- Finely chop some parsley and stir it into the sauce.
- Simmer gently until the vegetables are soft. When soft, remove from the heat and allow to cool for around 15 minutes.
- Once slightly cooled, blend the mixture until smooth.
- Serve over pasta, or portion and freeze for future meals.
