Homemade Vegetarian Bean Patty With Green Beans, Spinach And Potatoes Gratin

A hearty, comforting meal that brings together crispy bean patties, creamy potato gratin and fresh green vegetables. A delicious and nutritious plate for growing appetites.

Ingredients
  • 240g Chickpeas In Water (Drained)
  • 80g Mixed Vegetables
  • 40g English Onion
  • 20g Garlic Puree
  • 20ml Olive Oil
  • 10g Gluten-Free Plain White Flour (For Patties)
  • 100g Whole Green Beans
  • 200g Leaf Spinach
  • 400g Potatoes, Sliced
  • 120g Sunflower Spread
  • 120g Gluten-Free Plain White Flour (For Gratin Roux)
  • 120ml Whole Milk
  • 120g Grated Mature White Cheddar
  • 16g Vegetable Bouillon Mix

What you need:
  1. Prepare all your ingredients ready for cooking, including chopping your vegetables, slicing your potatoes and draining your chickpeas.
  2. Preheat your oven to 180°C. Melt sunflower spread in a saucepan over a medium heat, stirring in your gluten-free flour and cook for 1-2 minutes. Gradually whisk in milk until it thickens, and then do the same with the cheddar cheese.
  3. Layer sliced potatoes in a large baking dish and pour over the cheese sauce, placing in the oven to bake for about 40-45 minutes.
  4. Heat your olive oil in a pan over medium heat. Sauté the onion and garlic for about 3-4 minutes or until translucent. Add the drained chickpeas, mixed vegetables and vegetable stock, cooking for a further 5 minutes, stirring occasionally. 
  5. Remove from heat and let cool slightly. Mash the mixture and add gluten-free flour to help bind it together (add water if needed). From her you should be able to shape the mixture into patties.
  6. When the potato gratin has about 20 minutes left, put the patties in the oven. Drizzle the patties with oil, place them on a baking tray and bake alongside gratin for 15-20 minutes, until lightly browned.
  7. While the oven finishes off the patties and potatoes, bring a pot of water to boil for your vegetables. The green beans should take 4-5 minutes while the spinach should take 2-3 minutes. Once cooked, drain and keep them warm until serving.
  8. Once the gratin and patties are fully cooked, plate everything together and enjoy a hearty, healthy plate of food!
